How To Make Palak Paneer

One of the easiest vegetarian recipes, palak paneer, is easy to cook. If you are looking to make it, here is what you need to do:

  • Rinse the palak in a large pot with water.
  • Spray some vinegar and salt
  • Rinse a few more times
  • Drain the water
  • Add half a tablespoon of oil in a
  • Add 1 or 2 chopped green chillies
  • Add palak and 8–10 cashew nuts
  • Saute on medium heat for 2-3 minutes, making sure all the raw flavor goes away
  • Cool it. Add it to a blender jar. Add ¼ cup water in a blender
  • Blend to make a smooth puree. Make it thick and smooth.
  • Heat pan with 1 tablespoon of butter and add half a tablespoon of oil
  • Add 2 whole cardamoms
  • 1-inch cinnamon
  • 2 cloves and 1/8th of cumin seed
  • Add ¾ cup fine chopped onions
  • Fry till onions turn golden
  • Add ¾ teaspoon ginger garlic paste
  • Saute for 1 minute
  • Add deseeded, finely chopped half cup tomatoes and half a teaspoon salt
  • Sautee well
  • Add ½ to ¾ teaspoons of garam masala when the tomatoes are mushy. Sautee till the masala smells good for 2–3 minutes.
  • Put ¾ cups of water in it and cook on medium heat till the onions are soft-cooked.
  • Add half a teaspoon of kausri methi, crush it, and add it.
  • When the gravy is thick, lower the flame. Add the palak puree. Mix it and cook it till it bubbles. This usually takes two minutes. Test and add salt appropriately.
  • Add 1 ¼ cups of palak paneer or 150 grams
  • Give it a good stir, and add some cream.

Roasted Fresh Vegetables

What You Need

  • Onion
  • Other vegetables, as per taste
  • Pepper
  • Olive oil
  • Herbs

How To Make Roasted Vegetables

  • Preheat the oven and add a sliced onion
  • Switch the oven on to 180 degrees Celsius or 375 degrees F.
  • Add one medium-sized onion and cut it into four wedges. Thin every wedge and scatter across the baking dish
  • Wash other vegetables as per taste and add them to the dish. You can use zucchini, potatoes, eggplant, bell peppers, tomatoes, carrots or any other
  • Place all vegetables in the baking dish
  • Add salt and pepper as needed

  • Add oil to vegetables and stir them. It is wise to add 4-5 tablespoons of olive oil and toss in the vegetables until mixed.
  • Roast the vegetables for 45–60 minutes.

Arbi (Taro Root)

What You Need

  • Arbi
  • Water
  • Oil
  • Carom seeds
  • Red chilli powder
  • Coriander powder
  • Dried mango powder
  • Rock salt or plain salt
  • Mint leaves

How To Make Arbi (Taro  Root)

  • Wash 250 grams of arbi and put it in a microwave, pressure cooker or instant pot
  • If you are microwaving, take some water in a bowl and cover the arbi. Microwave for 5–6 minutes till it is cooked. Make sure you don’t overdo it so that it doesn’t turn mushy
  • Let the arbi sit in the same bowl for 2 minutes
  • Drain water and peel them
  • You can also chop them if you like
  • Deep-fry arbi in hot oil on medium heat. Make sure they don’t burn.
  • Drain them on a kitchen pan
  • Use another pan to heat the oil. Add 1 or 2 teaspoons of oil and add carom seed. Fry for one minute on low heat.
  • Keep the heat at its lowest.
  • Add one teaspoon of chilli powder
  • Add 1 teaspoon of coriander powder
  • Make sure the spices don’t burn
  • Add the fried arbi to the mixture
  • The next step is to add one (1) teaspoon of dried mango powder and mix it well
  • Add salt per taste
  • Garnish it with chopped mint leaves
